Travel Masters’ Kitchen - Oatmeal Cookies

Peggy Nichols’ Oatmeal Cookies

Ingredients:
1 cup shortening
1 1/2 cup flour
2 eggs
1 teaspoon salt
1 teaspoon vanilla
3 cups oats (quick)
1 cup brown sugar
1 teaspoon baking soda
1 cup white sugar
1 cup nuts

Directions:
Cream shortening, sugar (brown & white); add eggs and vanilla.
Mix together.

Add flour, salt and baking soda. Mix together.
Add nuts and oats and mix by hand until well blended.
Divide dough and shape on wax paper 2 inches by 12 inches.
Freeze overnight.

Cut about ¼ inch thick and bake at 350 until golden brown.
